VINEYARD OF ORIGIN: Viña Vieja and La Casa – Elez Estate – El Bonillo (Albacete) – ca. 3000 ft. Altitude.
SOIL: Poor, loose and good drained, with clay-limy characteristics.
MACERATION: Cold maceration with dry ice for 12 hours for a greater extraction of aromas, controlled fermentation at 16 degrees. At the end of the fermentation its lees have moved and give this wine added roundness in mouth.
WEATHER CONDITIONS ON 2014 HARVEST:
A very cold winter with abundant snowfall. Cool spring, with rainfall. Very dry summer with temperature differences betweenthe day and night, have given us a very good natural freshness and an optimal maturity.
